Why organic production?

« Worried about how to best reveal the true nature of my land, researching perfect maturity levels, and being conscious of the necessity of sustainable agriculture, I made the choice 5/1/07 to change my entire vineyard to organic production.
This method that I been using since 2003 of working the soil, is within the framework of the path I started as a beginning winemaker in 1991 on this beautiful parcel of “Rouilleres.”
My decisions will always be guided by the best quality and this great adventure of bio offers us new potentials…”

Why manual harvesting?

«All you have to do is to place yourself at the end of the second of three sorting tables and look at the purity of raisins that have been rigorously picked over, to understand why manual harvesting is essential to our production.
In fact, the action of respecting the integrity of the grape all the way to the tank allows us to maintain the fruits’ clarity showing its suppleness and delicacy.
The harvest being perfectly healthy, the fermentation taking place in linear fashion is offering to our Cabernet Franc all the freedom to express its identity…”
